Abstract
In the mature eggs of Chinese velvet crabs, fats exist in two forms: drops of fats (L) and yolk body (Y). The former is a neutral fat, while the latter consists mainly of phospholipids. L and Y are almost full of mature eggs. Initially separated by multiple compacted small grains (sg), the two forms are distributed and segmented without boundaries. The forms of L and Y also undergo various changes. As such, the distributions and variations of L and Y can be used as indicators of egg maturity. During embryonic development, the distributions of L and Y change significantly to become a mesh. L is near-spherical and forms the center of the mesh-like vitelline matter. Syncytium abuts the vitelline matter and is used to absorb L and Y. Vitelline growth is abundant during the period when the ovaries undergo rapid development. The eggs are characterized by the active synthesis of Y. It is extremely rare for mature eggs and eggs during embryonic development to be characterized by L.

For decapod crustaceans, the period of substantial accumulation of vitelline matter occur when the ovaries undergo rapid development. One of the main substances being accumulated is fats. [1–4] These fats are important energy substances for embryonic development, with the amount and quality of fat accumulation having a great impact on the latter. [5–8] Under natural conditions, rapid ovarian development in the Chinese velvet crabs (Eriocheir sinensis) happens between 8–11 months, while the maturity stage commences in December and lasts until April the following year. [9] In order to understand the reproductive and physiological conditions of decapod crustaceans, it is important to have a good understanding of their ovarian development stage, as well as the forms and changes of vitelline fats during embryonic development.
